She was born in Sonora, the second largest pork-producing state in Mexico. Daughter of a pig\u2019s farmer, she grew up very closely to a massive meat distribution chain. That day, as she looked at her plate, she was suddenly aware of everything that had to happen to get food to her table each morning.<\/p>\n\n\n\n<p>She wanted to continue eating steaks but without sacrificing animals in the process. She dreamed with the possibility of planting a tree that would grow meat. Years later, she found a way to produce meat without killing animals. Her company is a pioneer in <strong>cultivating meat in Mexico<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Food of the future: cultivated meat<\/strong><\/h2>\n\n\n\n<p>Li Lu Lam is a biotechnologist who\u2019s working on developing food for future generations. Together with Grissel Trujillo and Mario \u00c1lvarez, her fellow researchers at Tecnol\u00f3gico de Monterrey\u2019s School of Engineering and Sciences, she created <a href=\"https:\/\/formafoods.com\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Forma Foods<\/strong><\/a><strong>,<\/strong> a startup looking to develop the \u201c<strong>meat of the future<\/strong>.\u201d<\/p>\n\n\n\n<p>The technology used is unique in Mexico. To \u201cdesign meat,\u201d as <a href=\"https:\/\/tec.mx\/es\/profesores\/eic\/grissel-trujillo-de-santiago\" target=\"_blank\" rel=\"noreferrer noopener\">Grissel Trujillo<\/a> puts it, cattle are <strong>biopsied and stem cells are isolated from the samples in bioreactors<\/strong>. Then they multiply, structure, and stimulate them so they become skeletal muscle with the same nutrients and taste as meat.<\/p>\n\n\n\n<p>The company is taking its first steps and estimates that it will be able to launch its first meat product within the next few years.<\/p>\n\n\n\n<p>They started by creating plant-based foods \u2212as other companies already do\u2212 and now have a hybrid model that fuses these with laboratory meat fibers. \u201cWe want to achieve the same structure, fibrousness, and bite resistance,\u201d Lam says.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><picture>\r\n                <source srcset=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/01\/forma-foods-1024x261.webp\" type=\"image\/webp\">\r\n                <img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"261\" src=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/01\/forma-foods-1024x261.png\" alt=\"photos of forma foods \" class=\"wp-image-154923\" srcset=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/01\/forma-foods-1024x261.png 1024w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/01\/forma-foods-300x76.png 300w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/01\/forma-foods-768x195.png 768w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/01\/forma-foods-1536x391.png 1536w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/01\/forma-foods-2048x521.png 2048w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/>\r\n            <\/picture><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">The meat industry and its impact on the environment<\/h2>\n\n\n\n<p><a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/12936963\/\" target=\"_blank\" rel=\"noreferrer noopener\">A meat-based food system requires an enormous amount of energy, land, and water resources<\/a>. Figures from the Food and Agriculture Organization (FAO) of the United Nations indicate that the industry is responsible for generating almost <strong>15% of the world\u2019s greenhouse gas emissions<\/strong>. This also involves high-impact water consumption and is one of the major causes of deforestation due to the expansion of pastures for livestock use.<\/p>\n\n\n\n<p>The stakes in the new industry are high. By generating cultivated meat on a massive scale, the aim is to create a market supply that \u2212to a large extent\u2212 reduces CO2 and methane gas emissions, water consumption, the need for deforestation and, of course, the need to <strong>raise and slaughter animals<\/strong>.<\/p>\n\n\n\n<p>The problem is that production capacity is still low, so products are very limited and expensive. Israel\u2019s <a href=\"https:\/\/future-meat.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Future Meat<\/a> and Singapore\u2019s <a href=\"https:\/\/www.ju.st\/\" target=\"_blank\" rel=\"noreferrer noopener\">Eat Just<\/a> are leading the international market.<\/p>\n\n\n\n<p>For Mario \u00c1lvarez of Forma Foods, this technology is a giant step forward for Mexico in the race to mitigate the adverse effects of population growth, such as an increase in meat consumption.<\/p>\n\n\n\n<p>\u201cMeat is a very complete food. However, when we look at the numbers and analyze population trends, it\u2019s easy to see that we\u2019re <strong>not going to be able to continue consuming meat at the rate we currently are<\/strong>,\u201d he says.<\/p>\n\n\n\n<p>This emerging industry faces huge challenges. The only way to make a major change depends on the ability to create mass production to compete with the traditional industry.<\/p>\n\n\n\n<p>Establishing a truly sustainable process, says Grissel Trujillo, requires aligning production with the use of clean energy and greater care in use of water and generation of gases.<\/p>\n\n\n\n<p>Although the impact this industry may generate will clearly be minor, it will only be measurable once production grows.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><picture>\r\n                <source srcset=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/03\/cultivating-meat-3.webp\" type=\"image\/webp\">\r\n                <img decoding=\"async\" width=\"677\" height=\"870\" src=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/03\/cultivating-meat-3.jpg\" alt=\"\" class=\"wp-image-156451\" srcset=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/03\/cultivating-meat-3.jpg 677w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/03\/cultivating-meat-3-233x300.jpg 233w\" sizes=\"(max-width: 677px) 100vw, 677px\" \/>\r\n            <\/picture><figcaption class=\"wp-element-caption\">Source: FAO Infographics design: Oldemar Gonz\u00e1lez \/ TecScience<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Disease-fighting tortillas<\/strong><\/h2>\n\n\n\n<p>Although synthetic meat will reach the Mexican market relatively soon, making it available to larger consumer could take longer.<\/p>\n\n\n\n<p>According to <a href=\"https:\/\/tec.mx\/es\/profesores\/eic\/sergio-roman-othon-serna-saldivar\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Sergio Serna<\/strong><\/a>, Director of Tec de Monterrey\u2019s Center for Protein Research and Development (CIDPRO), as well as being sustainable, the food of the future must be based on two principles: <strong>accessibility and healthiness<\/strong>.<\/p>\n\n\n\n<p>According to the <a href=\"https:\/\/www.coneval.org.mx\/Medicion\/Paginas\/PobrezaInicio.aspx\" target=\"_blank\" rel=\"noreferrer noopener\">latest poverty measurement report<\/a> from the National Council for the Evaluation of Social Development Policy (CONEVAL), 22.5% of the Mexican population lacks access to <strong>quality, nutritious food<\/strong>.<\/p>\n\n\n\n<p>CIDPRO researchers agree that protein consumption is key to better nutrition. Therefore, its technological efforts are focused on proteins of vegetable origin, such as cereals and legumes, not only because they are high in nutritional value but also because they are affordable to people with fewer economic resources.<\/p>\n\n\n\n<p>In his laboratory, Serna has worked for more than 10 years on a food that is part of Mexico\u2019s culinary identity: the <strong>tortilla<\/strong>. The researcher and his group are developing corn <a href=\"https:\/\/link.springer.com\/article\/10.1007\/s11130-022-00961-8\" target=\"_blank\" rel=\"noreferrer noopener\">selenization<\/a> techniques through natural processes.<\/p>\n\n\n\n<p>This process \u2212waiting for a patent\u2212 is easy to apply. The corn kernels are allowed to germinate with selenium salt and then cooked with water and calcium hydroxide to create the dough that tortillas are made from.<\/p>\n\n\n\n<p>Within the human body, selenium produces <strong>glutathione peroxidase<\/strong>, an enzyme whose main function is to protect the body from the effects of degeneration and to counteract oxidative stress.<\/p>\n\n\n\n<p>Serna designed the method to be simple so that any <em>tortiller\u00eda <\/em>in Mexico can implement it, even those with rudimentary technology.<\/p>\n\n\n\n<p>The average Mexican consumes about six tortillas a day. Serna says that converting such a basic food into a new-generation protein not only ensures that it will be accessible to all but also helps prevent <strong>diseases such as diabetes, hypertension, and other disorders such as hypercholesterolemia<\/strong>, a defect that makes the body unable to eliminate bad cholesterol.<\/p>\n\n\n\n<p>Like those at CIDPRO, researchers at the Tec\u2019s <a href=\"https:\/\/tec.mx\/es\/instituto-de-obesidad\" target=\"_blank\" rel=\"noreferrer noopener\">Institute for Obesity Research<\/a> see plant proteins as an opportunity to improve people\u2019s health.<\/p>\n\n\n\n<p>In a situation with finite resources, making the most of the vegetable harvest is crucial, explains <a href=\"https:\/\/research.tec.mx\/vivo-tec\/display\/PID_3780\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Daniel Jacobo<\/strong><\/a>, who holds a Ph.D. in food science and technology.<\/p>\n\n\n\n<p>Jacobo\u2019s team is working on transforming organic waste from the food industry, especially from fruits, vegetables, and greens.<\/p>\n\n\n\n<p>After harvesting carrots and broccoli, for example, researchers apply <a href=\"https:\/\/www.tandfonline.com\/doi\/full\/10.1080\/19476337.2019.1624621\" target=\"_blank\" rel=\"noreferrer noopener\">cutting stress <\/a>by grating them, which induces the accumulation of <strong>phenolic compounds<\/strong> that protect against cardiovascular diseases.<\/p>\n\n\n\n<p>Jacobo explains that the process makes the vegetable begin to release antioxidants that can be transformed in the laboratory into nutraceutical ingredients, which are nutritional products with pharmacological properties.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><picture>\r\n                <source srcset=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/03\/cultivos-de-carne-1-1024x690.webp\" type=\"image\/webp\">\r\n                <img decoding=\"async\" src=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2023\/03\/cultivos-de-carne-1-1024x690.jpg\" alt=\"\" class=\"wp-image-156390\" \/>\r\n            <\/picture><figcaption class=\"wp-element-caption\">\u201cMeat is a very complete food. (Illustration: Eduardo Ram\u00f3n Trejo \/ TecScience) <\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Difficult solutions<\/strong><\/h2>\n\n\n\n<p>Although diets based on vegetable protein consumption are the best option for lessening the impacts of traditional meat production, the reality is something quite different.<\/p>\n\n\n\n<p>For example, pork consumption increased 18% over the previous month in January 2022, according to <a href=\"https:\/\/www.gob.mx\/agricultura\/prensa\/aumenta-casi-20-consumo-de-carne-de-cerdo-en-mexico-en-primer-bimestre-del-ano#:~:text=De%20acuerdo%20con%20informaci%C3%B3n%20de,igual%20mes%20del%20a%C3%B1o%20anterior.\" target=\"_blank\" rel=\"noreferrer noopener\">official data<\/a>, with the trend continuing upward for the rest of the year. Then it is essential to offer consumers alternatives that allow them to continue consuming meat in a sustainable manner, as is the case with Forma Foods.<\/p>\n\n\n\n<p>For <a href=\"https:\/\/www.tecsalud.mx\/directorio-medico\/lic-dixia-ramirez-vega\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Dixia Ram\u00edrez,<\/strong> a clinical nutritionist at <u>TecSalud<\/u>\u2018s Digestive Health Institute, the vegetable protein sector faces another challenge in becoming the basis for the diet of the future: <strong>massive crop waste<\/strong>.<\/a><\/p>\n\n\n\n<p>In Mexico, <a href=\"https:\/\/www.gob.mx\/profeco\/documentos\/evita-el-desperdicio-de-alimentos\" target=\"_blank\" rel=\"noreferrer noopener\">one third of food produced is wasted, equivalent to 38 tons per minute, which could feed 25.5 million people in need of food<\/a>.<\/p>\n\n\n\n<p>Ram\u00edrez explains that contrary to popular belief, malnutrition in the world is not the result of a lack of food but of <strong>unfair and inefficient distribution<\/strong>.<\/p>\n\n\n\n<p>\u201cIt\u2019s a shame that so many environmental resources are used for production and are wasted through carelessness during the transportation, storage, and preparation processes,\u201d adds <a href=\"https:\/\/research.tec.mx\/vivo-tec\/display\/PID_121157\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Cristina Chuck-Hern\u00e1ndez<\/strong><\/a>, co-founder of CIDPRO, who explains that difficult decisions need to be made so that all people can have sustainably produced food that is accessible and healthy.<\/p>\n\n\n\n<p>On the one hand, consumers need to start modifying their habits, prioritizing their health, and avoiding excessive consumption.<\/p>\n\n\n\n<p>On the other hand, companies need to stop prioritizing economic profit over public health. Above all, the government must provide an economic boost to the food sector and regulate it, guaranteeing <strong>decent food as a universal right<\/strong>.<\/p>\n\n\n\n<p>\u201cWill this be easy?
