This winner of the <strong><a href=\"https:\/\/premiomujer.tec.mx\/es\/ganadoras-2023\" target=\"_blank\" rel=\"noreferrer noopener\">2023 Mujer Tec Award for Science<\/a><\/strong> has always been passionate about painting, literature, and history.&nbsp;<\/p>\n\n\n\n<p>She grew up in <strong>Oaxaca<\/strong>, surrounded by the galleries, museums, and churches in its historic center, at the heart of a family dedicated to culture. \u201cMy mom worked in Santo Domingo, and I spent all my time in painting and pottery workshops; I knew the collections so well that I even know which year certain pieces were made,\u201d she says excitedly, her tone revealing that she had a happy childhood.&nbsp;&nbsp;<\/p>\n\n\n\n<p>\u201cI was certain that I was going to be a painter; I even won several competitions. But I also really liked science. I loved reading pop science books and understanding how things worked, as well as reading stories about what the cities of the future would be like.\u201d<\/p>\n\n\n\n<p>Our interview takes place in the <strong>Bioengineering Center, <\/strong>the newest and most striking building on Tec de Monterrey\u2019s <strong>Quer\u00e9taro campus,<\/strong> a concrete structure with angled panels that allow light to enter and give it an airy feel. There aren\u2019t many people here this Friday morning in July because of the vacations.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe title=\"Aurea Karina Ram\u00edrez, a research professor at the Bioengineering department on Tec de Monterrey\u2019s\" width=\"800\" height=\"450\" src=\"https:\/\/www.youtube.com\/embed\/by5wjt02Uac?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<p>Even so, some researchers continue working at one of the 12 laboratories in this innovative space that allows them to perform genomic and metabolomic studies, as well as biomarker tests.<\/p>\n\n\n\n<p>Aurea receives me in the teachers\u2019 area. Today, she isn\u2019t wearing the lab coat I\u2019ve seen in her photos, sporting a colorful light blouse instead. Also the recipient of an<strong> Inspiring Teacher Award in 2021,<\/strong> the researcher has a broad and easy smile, is sure of herself, and speaks very clearly. She seems very open to talking about everything.<\/p>\n\n\n\n<p>When I ask her how she came to be at the Tec, she tells me that <strong>her good grades had earned her a scholarship to study at Prepa Tec <\/strong>in Quer\u00e9taro when she was 15. After that, when it was time to choose a degree course, she ended up choosing Food Engineering despite her belief that she would be an artist. \u201cI was struck by the beautiful labs and the professors in their lab coats.\u201d&nbsp;<\/p>\n\n\n\n<p>She later concentrated on the topic of <strong>functional food <\/strong>and studied for a master\u2019s and a PhD at the Autonomous University of Quer\u00e9taro (UAQ). Dr. Ram\u00edrez returned to the Tec as a full professor. One of her projects, developed alongside Dr. Marcela Gayt\u00e1n at UAQ, is a <strong>candy made of fruit peel and bagasse <\/strong>that helps reduce the percentage of fat in the liver, as well as modulate the gut microbiota in children who have some degree of obesity.&nbsp;<\/p>\n\n\n\n<p>Another project focuses on utilizing <strong>thousands of kilograms of fiber waste from distilling mezcal<\/strong> to incorporate it into functional foods and thus enrich them with antioxidants and fiber.&nbsp;<\/p>\n\n\n\n<p><strong><em>Your research work focuses on nutrigenomics. I\u2019m sure there are a lot of people who don\u2019t understand that term\u2026&nbsp;<\/em><\/strong><\/p>\n\n\n\n<p>Hardly anybody knew it 10 years ago. I learned it in my graduate studies and took an interest in it, which allowed me to refocus my PhD project. I decided not to only look at the formulation of the product, but also do a clinical study to identify what happens to the body when it\u2019s consumed.<\/p>\n\n\n\n<p>People have more information today; they\u2019re more aware of these things. We now know that there\u2019s a connection between diet and the development of diseases. We know which metabolites and genes are activated when you have a certain type of diet, how diverse your microbiota might be, and so on.<\/p>\n\n\n\n<p>One of the great trends in nutrigenomics, which will soon become a reality, has to do with developing <strong>foods that are tailored to your genome,<\/strong> to your DNA.<\/p>\n\n\n\n<p><strong><em>You\u2019ve incorporated the principles of the circular economy into several of your research initiatives\u2026<\/em><\/strong><\/p>\n\n\n\n<p>The research group I lead is called <strong>Sustainable Bio Products <\/strong>and our goal is to enhance products and utilize waste. Although one of my projects has to do with making functional foods from waste, we\u2019re also making biofertilizers.&nbsp;<\/p>\n\n\n\n<p>Another line of research has to do with products to control emotions, to regulate the gut microbiota based on ingredients that can be obtained from agave waste fibers.&nbsp;<\/p>\n\n\n\n<p>All of these initiatives came from Nat Pro Lab, a strategic project promoted by <a href=\"https:\/\/research.tec.mx\/vivo-tec\/display\/PID_173121\" target=\"_blank\" rel=\"noreferrer noopener\">Ashutosh Sharma, <\/a>who\u2019s <strong>Director of the Bioengineering Center,<\/strong> and we all support each other.&nbsp;<\/p>\n\n\n\n<p><strong><em>What does someone like you eat when you\u2019re so aware of the effect that food has on the body?<\/em><\/strong><\/p>\n\n\n\n<p>I try to follow a balanced diet precisely because I know what will happen if I eat certain things\u2026 Although it\u2019s not always possible, I try to incorporate at least one fruit and one vegetable into each meal. I don\u2019t have dinner very often. When I do, it\u2019s a small salad and one protein.&nbsp;<\/p>\n\n\n\n<p><strong>I never drink sodas or juice. <\/strong>I always prefer water, tea, beer, or coffee. It\u2019s just been discovered that coffee can have positive or negative effects depending on people\u2019s genome and metabolism.<\/p>\n\n\n\n<p>It\u2019s also been proven that the <strong>best method for preparing coffee<\/strong> it is filtering it under pressure, like an espresso. What purpose does winning awards serve?<\/em><\/strong><\/p>\n\n\n\n<p>Although an award provides reaffirmation of your skills, what\u2019s more important is that it gives you visibility for building a collaboration network. Awards serve to open doors and put you in places that allow you to build relationships with key people.&nbsp;<\/p>\n\n\n\n<p>In my case, the <strong><a href=\"https:\/\/www.uaq.mx\/dip\/index.php\/investigacion\/coordinacion-de-difusion-y-enlace\/premio-alejandria\" target=\"_blank\" rel=\"noreferrer noopener\">Alejandrina Award <\/a>I won in 2020 <\/strong>helped me to promote my research skills. The Inspiring Teacher Award I received in 2021 helped me to meet a lot of people from other areas. Thanks to that, collaborations have sprung up that I never would have imagined.&nbsp;<\/p>\n\n\n\n<p>What\u2019s more, awards mean that companies approach you because they realize you can do something they need.&nbsp;<\/p>\n\n\n\n<p><strong><em>What\u2019s the hardest thing about being a researcher?<\/em><\/strong><\/p>\n\n\n\n<p>Obtaining funding, having the necessary resources. It\u2019s not always that easy; it\u2019s more or less complicated depending on the area you\u2019re in. I work on clinical studies that need a lot of resources for developing research.&nbsp;<\/p>\n\n\n\n<p><strong><em>Which failure has taught you the most?<\/em><\/strong><\/p>\n\n\n\n<p>During my PhD, I gave a presentation to a foreign university, and I realized that I couldn\u2019t communicate the objective of my project clearly. It wasn\u2019t because of my English; it was because my ideas were very abstract.&nbsp;<\/p>\n\n\n\n<p>I identified that failure and <strong>it motivated me to prepare myself more.<\/strong> I think I\u2019ve changed a lot in that sense. I\u2019ve learned to give clear presentations, to develop administrative and organizational skills, and to present confidently and assertively. The result is that three of my projects have now been approved for funding.&nbsp;<\/p>\n\n\n\n<p><strong><em>What do your students see in you? Why do you think you won the Inspiring Teacher Award?<\/em><\/strong><\/p>\n\n\n\n<p>I think it\u2019s because I\u2019m <strong>empathic<\/strong>. I love getting to know who my students are, how they feel, what they\u2019re interested in, and how they perceive things. (Photos: courtesy)<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">The path of art<\/h2>\n\n\n\n<p>Many years after having strayed from the path of art, Aurea has found it again thanks to a collaboration with the <a href=\"https:\/\/tec.mx\/en\/our-faculty\/eaad\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Tec\u2019s School of Architecture, Art and Design,<\/strong><\/a> where she began to develop <a href=\"https:\/\/saidokins.com\/es\/projects\/bioart-installation-bacterial-said-dokins\/?v=267d696eab9e\" target=\"_blank\" rel=\"noreferrer noopener\">bacteriological inks for <strong>Said Dokins<\/strong>,<\/a> a contemporary artist known for his calligraphy drawings on walls in different parts of the world.&nbsp;<\/p>\n\n\n\n<p>The interesting part is that when he uses the inks developed by Aurea, the letters grow and change shape. She\u2019s also participating in another project to measure the brainwaves of people in different states of mind to see how this is connected to the gut microbiota, in order to convert all these data into music. \u201cThese are incredible collaborations because they never would have occurred to me. I felt like I was recovering the lost opportunity of devoting myself to art.\u201d<\/p>\n\n\n\n<p>Separated for the past 12 years, Aurea has raised her three children on her own while developing her research career. \u201cI have a very collaborative family dynamic with my kids. We all do the chores and walk the dog. (Photo: courtesy)<\/figcaption><\/figure>\n\n\n\n<p><strong><em>What do you see yourself doing in the future?&nbsp;<\/em><\/strong><\/p>\n\n\n\n<p>I think I can consolidate the research group and start making more connections with the industry so that we can work together, as well as creating resources, motivating students more, and consolidating lines of research. We can also explore the option of a startup or technology transfer.&nbsp;<\/p>\n\n\n\n<p><strong><em>If you could solve one of humanity\u2019s problems, what would it be?<\/em><\/strong><\/p>\n\n\n\n<p>There would be two. One of them has to with <strong>sustainability<\/strong>. I want to find ways to reduce the generation of waste and have less energy and water impact. The other would be to improve the <strong>quality of food,<\/strong> to make it more widely available, more nutritious, and not have a negative impact on health.&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Her goal is to develop more nutritious food.
