{"id":172513,"date":"2026-02-23T15:04:47","date_gmt":"2026-02-23T21:04:47","guid":{"rendered":"https:\/\/tecscience.tec.mx\/en\/?p=172513"},"modified":"2026-02-23T15:09:28","modified_gmt":"2026-02-23T21:09:28","slug":"tomato-losses","status":"publish","type":"post","link":"https:\/\/tecscience.tec.mx\/en\/cities-and-prosperous-communities\/tomato-losses\/","title":{"rendered":"When the Tomato Doesn\u2019t Make It to the Table: Losses in the Supply Chain, and How to Prevent Them"},"content":{"rendered":"\n<p>In Mexico, <a href=\"https:\/\/www.fao.org\/mexico\/noticias\/detail-events\/es\/c\/1743069\/\" target=\"_blank\" rel=\"noreferrer noopener\">roughly one-third of the food<\/a> produced in the countryside <strong>is lost before reaching consumers<\/strong>. Tomatoes, known locally as <em>jitomates<\/em>, are among the hardest hit. In some of the country\u2019s wholesale markets, between 40 and 50% of the incoming supply is discarded. A range of factors drives these losses, including improper handling, transportation challenges, weather conditions, and demand fluctuations.<\/p>\n\n\n\n<p>In response to this problem, researchers from <a href=\"\/en\/tag\/egade\/\" target=\"_blank\" rel=\"noreferrer noopener\">EGADE Business School<\/a> and the <a href=\"\/en\/tag\/school-of-engineering-and-sciences\/\" target=\"_blank\" rel=\"noreferrer noopener\">School of Engineering and Sciences<\/a> (EIC) at Tecnol\u00f3gico de Monterrey are leading a project to examine tomato losses along the supply chain in the state of Nuevo Le\u00f3n.<\/p>\n\n\n\n<p><a href=\"https:\/\/egade.tec.mx\/en\/node\/5021\" target=\"_blank\" rel=\"noreferrer noopener\">Alicia Galindo<\/a>, research professor at the business school and national director of the Master&#8217;s in Finance program at EGADE Business School, explains that these losses amount to millions of pesos and carry high environmental costs due to decomposition, as well as the heavy <strong>use of water and fuel<\/strong>. They also have a social impact, posing challenges for <a href=\"\/en\/human-social\/food-security-and-nutrition-project\/\" target=\"_blank\" rel=\"noreferrer noopener\">food security<\/a>.<\/p>\n\n\n\n<p>\u201cThis is a really meaningful project,\u201d Galindo says. \u201cIt\u2019s not just about supporting wholesale markets, warehouse operators, or producers. We\u2019re also going into the fields to understand how tomato production is being carried out. (Photo: Courtesy of Alicia Galindo)<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Quantifying Food Losses from Farm to Market<\/h2>\n\n\n\n<p>This study is being carried out in collaboration with Mercado de Abastos Estrella, in the Monterrey metropolitan area, with the goal of better understanding the people who manage and sell tomatoes there.<\/p>\n\n\n\n<p>\u201cWe realized that <strong>in Nuevo Le\u00f3n there are no data<\/strong> on the amount of fruit and vegetable produce that is lost as it moves from the field to its first point of contact,\u201d says Garc\u00eda.<\/p>\n\n\n\n<p>The project titled <em>\u201cComprehensive Forward and Reverse Diagnosis of Tomato Handling in an Urban Market in Nuevo Le\u00f3n: An LCSA and Double Materiality Approach to Reducing Losses with Social Impact\u201d<\/em> was selected as part of the 2025 National Call for Basic and Frontier Science by the Ministry of Science, Humanities, Technology, and Innovation (Secihti).<\/p>\n\n\n\n<p>According to Alicia Galindo, the study is grounded in the <em>Lifecycle Sustainability Assessment<\/em> model, which evaluates <strong>three key dimensions<\/strong> across the tomato value chain: <strong>environmental impact<\/strong>, measuring the tomato\u2019s environmental footprint from the field through distribution; <strong>financial cost<\/strong>, meaning the economic impact of waste; and <strong>the impact on the various stakeholders<\/strong> along the chain.<\/p>\n\n\n\n<p>\u201cAnd double materiality analysis is essentially about building a matrix where we assess <strong>the financial impact of that waste and the level of priority <\/strong>or risk it poses to each of the stakeholders involved,\u201d Galindo explains.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><picture>\r\n                <source srcset=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/02\/quotes-rebeca-garcia-1024x1024.webp\" type=\"image\/webp\">\r\n                <img decoding=\"async\" width=\"1024\" height=\"1024\" src=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/02\/quotes-rebeca-garcia-1024x1024.png\" alt=\"\" class=\"wp-image-172519\" srcset=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/02\/quotes-rebeca-garcia-1024x1024.png 1024w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/02\/quotes-rebeca-garcia-300x300.png 300w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/02\/quotes-rebeca-garcia-150x150.png 150w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/02\/quotes-rebeca-garcia-768x768.png 768w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/02\/quotes-rebeca-garcia.png 1080w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/>\r\n            <\/picture><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\"><br>Preventing Losses at the Source to Avoid Future Waste<\/h2>\n\n\n\n<p>The team is also incorporating <a href=\"\/en\/tag\/artificial-intelligence\/\" target=\"_blank\" rel=\"noreferrer noopener\">artificial intelligence<\/a> tools to monitor and analyze data, intending to identify patterns of shrinkage, anticipate peak loss seasons, and support decision-making through data visualization tools. To carry out this work, students from the Tec\u2019s Master\u2019s in Applied Artificial Intelligence program will also take part.<\/p>\n\n\n\n<p>\u201cWe\u2019ve identified that, even though producers and vendors in the Monterrey metropolitan area keep records and historical data on what\u2019s produced and what\u2019s lost, <strong>those data aren\u2019t really being used to inform decision-making,<\/strong>\u201d Mir\u00f3n explains.<\/p>\n\n\n\n<p>Beyond simply quantifying what has already been lost, the project will promote targeted interventions at critical prevention points by pinpointing the technical and operational variables that affect product quality and shelf life.<\/p>\n\n\n\n<p>\u201cIt\u2019s going to be a preventive effort, because we\u2019re looking at everything from harvest timing and ripeness to the condition in which the product arrives,\u201d Garc\u00eda adds. \u201cWhile there are many factors at play, we\u2019re already seeing trends in the data we\u2019ve been able to gather. (Photo: Jos\u00e9 \u00c1ngel de la Paz)<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Building a Local Circular Economy to Scale Later<\/h2>\n\n\n\n<p>The project also envisions Circular Economy strategies so that tomatoes that can no longer be sold fresh can be repurposed and <strong>transformed into other food products<\/strong>, giving them a second life instead of letting them go to waste.<\/p>\n\n\n\n<p>The team has taken part in initiatives before the Congress of Nuevo Le\u00f3n to propose amendments to the Law on the Right to Adequate Food and the Fight Against Food Waste. They have also joined working groups tied to the state\u2019s Zero Hunger strategy. In addition, Esther P\u00e9rez notes that the project\u2019s findings could provide valuable evidence for <strong>shaping public policy<\/strong> and implementing both the Circular Economy Law and the General Law on Adequate and Sustainable Food.<\/p>\n\n\n\n<p>The project is expected to run for approximately two to three years, a period during which the team aims to gather sufficient data and evidence to support its recommendations.<\/p>\n\n\n\n<p>Looking ahead, the researchers hope the initiative will become a scalable model\u2014one that can be replicated with other types of food and in other regions across the country. Just as importantly, they aim to raise public awareness about the true value of food and the labor, resources, and effort required to bring it to the table. \u201cWe want consumers to <strong>understand everything<\/strong> that goes into buying three tomatoes,\u201d P\u00e9rez says.<\/p>\n\n\n\n<p><em><strong>Did you find this story interesting?
