{"id":172875,"date":"2026-03-23T11:45:38","date_gmt":"2026-03-23T17:45:38","guid":{"rendered":"https:\/\/tecscience.tec.mx\/en\/?p=172875"},"modified":"2026-03-26T13:02:05","modified_gmt":"2026-03-26T19:02:05","slug":"energy-bar-triglycerides-in-blood","status":"publish","type":"post","link":"https:\/\/tecscience.tec.mx\/en\/health\/energy-bar-triglycerides-in-blood\/","title":{"rendered":"Scientists Developed a Nutritious Bar that Helps Reduce Triglycerides Levels"},"content":{"rendered":"\n<p>Imagine going to a convenience store and being able to buy a nutritious bar that not only provides you with  nutrients and makes you feel satisfied, but also <strong>helps lower your blood triglyceride levels<\/strong>. This is what a Mexican product made from common <a href=\"\/en\/biotechnology\/mexican-bean\/\" target=\"_blank\" rel=\"noreferrer noopener\">beans<\/a> and oats has achieved.<\/p>\n\n\n\n<p>It all started when <a href=\"\/en\/biotechnology\/aurea-karina-ramirez\/\" target=\"_blank\" rel=\"noreferrer noopener\">Aurea Karina Ram\u00edrez<\/a>, a research professor at the <a href=\"\/en\/tag\/school-of-engineering-and-sciences\/\" target=\"_blank\" rel=\"noreferrer noopener\">School of Engineering and Sciences<\/a> (EIC) of the Monterrey Institute of Technology, was doing her master&#8217;s thesis at the <a href=\"https:\/\/www.uaq.mx\/\" target=\"_blank\" rel=\"noreferrer noopener\">Autonomous University of Quer\u00e9taro<\/a> (UAQ) under the supervision of <a href=\"https:\/\/quimica.uaq.mx\/index.php\/loarca-flavia\" target=\"_blank\" rel=\"noreferrer noopener\">Flavia Loarca<\/a>.<\/p>\n\n\n\n<p>What they were looking for was to develop a product that would take advantage of beans, <a href=\"https:\/\/www.gob.mx\/agricultura\/prensa\/estima-agricultura-crecimiento-de-11-4-de-la-produccion-de-frijol-en-2021-mantiene-tendencia-al-alza?utm_source=chatgpt.com\" target=\"_blank\" rel=\"noreferrer noopener\">whose consumption in the country has fallen by about 50%<\/a> in the last four decades.<\/p>\n\n\n\n<p>Initially, Ram\u00edrez developed <a href=\"https:\/\/ri-ng.uaq.mx\/bitstream\/123456789\/922\/1\/RI004027.PDF\" target=\"_blank\" rel=\"noreferrer noopener\">more than 54 different formulations<\/a>, which were tested by a group of people to find the best texture, flavor, and appearance of the food.<\/p>\n\n\n\n<p>\u201cThe interesting part came later when we carried out studies to understand its effect on the body,\u201d says Ram\u00edrez.<\/p>\n\n\n\n<p>In an in vitro evaluation, they found theirs had half the fat of other competing nutrition bars and <strong>more than 10 grams of <a href=\"\/en\/industrial-transformation\/maize-weevil-flour\/\" target=\"_blank\" rel=\"noreferrer noopener\">protein<\/a><\/strong>, derived from mixing beans and a cereal.<\/p>\n\n\n\n<p>The next step was to test in a clinical trial whether the bar had a positive impact on the bodies of the people who consumed them.<\/p>\n\n\n\n<p>\u201cWe recruited a group of women from Quer\u00e9taro who had high triglycerides,\u201d the researcher explains.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">From Formulation to Clinical Trial<\/h2>\n\n\n\n<p>The study involved 26 women with hypertriglyceridemia, of whom 14 were assigned to the experimental group \u2014the one that consumed the bar\u2014 and 12 to the control group.<\/p>\n\n\n\n<p>For eight weeks, <a href=\"https:\/\/www.frontiersin.org\/journals\/nutrition\/articles\/10.3389\/fnut.2022.890136\/full\" target=\"_blank\" rel=\"noreferrer noopener\">the experimental group consumed 50 grams of the bar daily<\/a>, while the other group only made adjustments to their diet. At the end of the treatment, <a href=\"https:\/\/ri-ng.uaq.mx\/bitstream\/123456789\/403\/1\/RI003516.pdf\" target=\"_blank\" rel=\"noreferrer noopener\">triglyceride levels decreased<\/a> <strong>by approximately 38%<\/strong> in those who consumed the bar, without needing to restrict their diet.<\/p>\n\n\n\n<p>\u201cWith the control group there was also a slight decrease in this marker, but it was not statistically significant,\u201d says Ram\u00edrez.<\/p>\n\n\n\n<p>Although the results are promising, the sample size of the trial is small, so larger studies are needed to confirm its effectiveness.<\/p>\n\n\n\n<p>However, upon seeing this result, the expert and her team did not stop there and decided to investigate what was behind this response.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Behind the Promising Results<\/h2>\n\n\n\n<p>What they found is that their formulation combines bioactive compounds from beans, <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0023643817308629\" target=\"_blank\" rel=\"noreferrer noopener\">such as fiber, resistant starch and polyphenols<\/a> \u2014molecules with <a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1002\/9781119138105.ch5\" target=\"_blank\" rel=\"noreferrer noopener\">antioxidant<\/a> and anti-inflammatory capacity\u2014 , along with the \u03b2-glucans from oats, known for their cardioprotective effect.<\/p>\n\n\n\n<p>Together, these components help the intestine absorb less fat, promote cholesterol elimination, and reduce the production of new fats in the body.<\/p>\n\n\n\n<p>\u201cWe also saw changes in <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/abs\/pii\/S0963996915000034\" target=\"_blank\" rel=\"noreferrer noopener\">neuropeptides and hormones<\/a> that are related to how likely fats are to stick to our arteries,\u201d says Ram\u00edrez.<\/p>\n\n\n\n<p>In a protein analysis of the people who consumed the bar, they found that the expression of at least 40 proteins associated with inflammation and lipid metabolism was modified.<\/p>\n\n\n\n<p>Among the most important effects are <strong>better regulation of inflammatory processes<\/strong> and changes in the way the body uses fats as an energy source.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">From the Lab to the Shelf<\/h2>\n\n\n\n<p>Seeing that their product had such good results, they decided to start marketing it. They named it <a href=\"https:\/\/www.facebook.com\/people\/Flavis\/100069055275229\/\" target=\"_blank\" rel=\"noreferrer noopener\">Flavis<\/a>, in honor of Loarca, and made a small production that was sold in the UAQs cafeteria until before the pandemic.<\/p>\n\n\n\n<p>After the health crisis, it was difficult to secure funding, so production has not resumed, but they hope to restart talks about it soon.<\/p>\n\n\n\n<p>Regardless of whether or not their energy bar will be sold in stores in the future, the project illustrates how science can truly have an impact on people&#8217;s lives.<\/p>\n\n\n\n<p>&#8220;I think it&#8217;s a good example of how to make a product that passes all those stages, <strong>involving the consumer<\/strong>, validating the effects with scientific bases and taking it to production,&#8221; Ram\u00edrez says.<\/p>\n\n\n\n<p>Unlike medicines, functional foods \u2014such as Flavis\u2014 can simply be added to existing habits, without needing to change the entire diet, which offers an accessible way to improve public health.<\/p>\n\n\n\n<p>In Mexico, excess triglycerides is <a href=\"https:\/\/www.sprinforma.mx\/noticia\/72-4-de-la-poblacion-adulta-en-mexico-padecen-sobrepeso-u-obesidad-insp\" target=\"_blank\" rel=\"noreferrer noopener\">the most common dyslipidemia<\/a> and represent one of the main causes of cardiovascular risk and metabolic syndrome in the country.<\/p>\n\n\n\n<p>Therefore, having a bar in convenience stores that truly nourishes individuals and also <strong>addresses a health problem<\/strong> is almost utopian.<\/p>\n\n\n\n<p>\u201cI think it\u2019s important to boost local economies, like the bean economy, and if we have support from the government and businesses, its impact can be even greater,\u201d says Ram\u00edrez.<\/p>\n\n\n\n<p><strong><em>Did you find this story interesting?
