Dry and seemingly inert, the seeds aren&#8217;t exactly what we imagine when we think of an organism. For decades, science echoed this idea, assuming that their metabolism was virtually halted after harvesting.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S096399692600712X\" target=\"_blank\" rel=\"noreferrer noopener\">new study<\/a> challenges this by showing that, even when dry, common bean seeds <strong>maintain their biological activity<\/strong>, allowing them not only to retain their vitamin B9 reserves, but to increase them.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cWe are demonstrating that, at least, this metabolic pathway remains active,&#8221; says <a href=\"https:\/\/research.tec.mx\/vivo-tec\/display\/PID_41447\" target=\"_blank\" rel=\"noreferrer noopener\">Roc\u00edo D\u00edaz de la Garza<\/a>, a research professor at the <a href=\"\/en\/tag\/institute-for-obesity-research\/\" target=\"_blank\" rel=\"noreferrer noopener\">Institute for Obesity Research<\/a> (IOR) of Tecnol\u00f3gico de Monterrey. &#8220;We are breaking a paradigm.\u201d <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The research focused on a simple question, but one with major implications: what happens to folates \u2014the different forms of vitamin B9\u2014 while beans are stored?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In cereals such as corn, rice, and wheat, previous studies had documented that this vitamin <strong>degrades during storage<\/strong>, but in legumes, that story hadn&#8217;t been studied as much.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><picture>\r\n                <source srcset=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/08\/QUOTES-WEB-DUPLICAR-40-1024x1024.webp\" type=\"image\/webp\">\r\n                <img fetchpriority=\"high\" decoding=\"async\" width=\"1024\" height=\"1024\" src=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/08\/QUOTES-WEB-DUPLICAR-40-1024x1024.png\" alt=\"\" class=\"wp-image-174124\" srcset=\"https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/08\/QUOTES-WEB-DUPLICAR-40-1024x1024.png 1024w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/08\/QUOTES-WEB-DUPLICAR-40-300x300.png 300w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/08\/QUOTES-WEB-DUPLICAR-40-150x150.png 150w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/08\/QUOTES-WEB-DUPLICAR-40-768x768.png 768w, https:\/\/tecscience.tec.mx\/en\/wp-content\/uploads\/sites\/9\/2026\/08\/QUOTES-WEB-DUPLICAR-40.png 1080w\" sizes=\"(max-width: 1024px) 100vw, 1024px\" \/>\r\n            <\/picture><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">To answer this, a group of researchers analyzed three commercial varieties of common bean under different combinations of temperature and humidity.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cWhat happens in real life is that the beans are harvested, dried, and stored until the buyer arrives,\u201d says <a href=\"\/en\/biotechnology\/as-long-as-you-enjoy-science-theres-no-stopping-you-rocio-diaz-de-la-garza\/\" target=\"_blank\" rel=\"noreferrer noopener\">D\u00edaz de la Garza<\/a>. \u201cHere in Mexico, seeds are stored without any control, the state of the ones stored in Zacatecas is very different from that in Sinaloa.\u201d<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe title=\"De plaga a prote\u00edna: lo que no sab\u00edas del gorgojo del ma\u00edz\" width=\"800\" height=\"450\" src=\"https:\/\/www.youtube.com\/embed\/q7KYbWtKmyo?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/div><figcaption class=\"wp-element-caption\">English captions are available for the \u201cFrom Plague to Superfood: What you didn&#8217;t Know about the Corn Weevil\u201d<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">What Happens to a Stored Bean Seed?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">During the research \u2014which includes Itzel Avi\u00f1a&#8217;s doctoral thesis and Arturo Tlelo&#8217;s master&#8217;s thesis\u2014 the team stored grains of three varieties of beans for six months, varying the temperature and humidity.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Throughout this process, the team quantified the content of folates and their chemical precursors, measured proteins and amino acids, and performed transcriptomic analyses to identify the genes that remained active during storage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cWe modeled four different situations to see what happens when it is hot and humid, when it is dry, or when it is colder,\u201d D\u00edaz de la Garza recalls.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The results surprised the researchers: although the folate content decreased during the first month, under storage conditions of 15\u00b0C and 55% relative humidity it began to recover, exceeding initial levels after 180 days. Depending on the variety, the increase ranged from 36 to 48%.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cAfter thirty days, folate levels start to drop and then increase, so that was a shock,\u201d the expert explains.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After repeating the experiments and carrying out the necessary controls, the idea that what they were observing was a mistake disappeared.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gene expression analyses revealed beyond doubt that the activity of several genes responsible for the biosynthesis, transport, and stabilization of folates increased.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At the same time, they observed an <strong>increase in more stable forms of this vitamin<\/strong>, suggesting that the seeds not only produce it, but also preserve it during storage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">However, this gene activation did not occur throughout the entire metabolism. (Photo: Tecnol\u00f3gico de Monterrey)<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Possible Applications of a Shifting Paradigm<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">During the experiments and various measurements, <strong>a possible explanation emerged<\/strong>: some genes related to the synthesis of purines \u2014molecules that are part of DNA\u2014 and to the cell cycle, which are essential for future cell division, were activated.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">According to the authors, it appears that the seeds may be accumulating folate reserves in preparation for germination, even before coming into contact with water.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cThis vitamin is very important because it is needed for cell division,\u201d explains D\u00edaz de la Garza. \u201cAll organisms need it, from bacteria to plants to yeast; vertebrates cannot synthesize it, so our main source is plants.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Thus, the study <strong>challenges one of the most deeply rooted paradigms in plant biology<\/strong>: that dry seeds are metabolically inactive or asleep when we store them.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">With their results, the researchers are fostering new opportunities to <strong>improve food conservation<\/strong>, preserve its nutritional value, and develop biofortification strategies in food crops.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cThese are lines of research that could be initiated,\u201d says D\u00edaz de la Garza. \u201cWe are opening a window that can impact both agriculture and human nutrition.\u201d<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>Did you find this story interesting?
