La especialista en biotecnolog\u00eda y <strong>fundadora de la empresa <a href=\"https:\/\/jaseda.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Jaseda<\/a> <\/strong>encontr\u00f3 lo que buscaba en el <strong>frijol negro.<\/strong><\/p>\n\n\n\n<p>\u201cLa primera patente [que la investigadora registr\u00f3] es de los compuestos presentes en el frijol que ayudan a reducir el<strong> crecimiento de c\u00e9lulas cancer\u00edgenas<\/strong>\u201d, explica Guti\u00e9rrez Uribe.<\/p>\n\n\n\n<p>Desde hace m\u00e1s de 10 a\u00f1os, ha investigado las propiedades de esta semilla, que van desde la desinflamaci\u00f3n, la antioxidaci\u00f3n, la regulaci\u00f3n de la digesti\u00f3n y la prevenci\u00f3n del c\u00e1ncer, pues inhibe el crecimiento de c\u00e9lulas que \u2212como ella dice\u2212 \u201colvidan que tienen que morir\u201d.&nbsp;<\/p>\n\n\n\n<p>En un inicio, Guti\u00e9rrez Uribe buscaba vender su idea a una empresa que pudiera desarrollar productos con sus investigaciones, pero, \u201cpara su fortuna\u201d, no fue posible.<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe title=\"Frijol negro, un aliado para combatir el c\u00e1ncer\" width=\"800\" height=\"450\" src=\"https:\/\/www.youtube.com\/embed\/mpIugyOCEwc?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-el-frijol-negro-una-semilla-buena\"><strong>El frijol negro, una semilla buena<\/strong><\/h2>\n\n\n\n<p>En 2018, Guti\u00e9rrez Uribe y otros dos cient\u00edficos, <a href=\"https:\/\/tec.mx\/es\/profesores\/eic\/sergio-roman-othon-serna-saldivar\" target=\"_blank\" rel=\"noreferrer noopener\">Sergio Serna<\/a> y <a href=\"https:\/\/research.tec.mx\/vivo-tec\/display\/PID_112969\" target=\"_blank\" rel=\"noreferrer noopener\">Daniel Guajardo<\/a>, emprendieron con su propia compa\u00f1\u00eda, Jaseda, una <a href=\"https:\/\/jaseda.com\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>empresa que desarrolla ingredientes que ayudan a mejorar la salud<\/strong><\/a> y previenen enfermedades.<\/p>\n\n\n\n<p>\u201cQuise buscar un alimento mexicano que tuviera principios activos que valiera la pena extraer y validar su funcionalidad en modelos biol\u00f3gicos. No solo en nutrici\u00f3n sino en c\u00f3mo esas mol\u00e9culas presentes en los alimentos se utilizan para mejorar aspectos puntuales de la salud\u201d, dice quien tambi\u00e9n es l\u00edder de la <a href=\"https:\/\/tecscience.tec.mx\/es\/tag\/institute-for-obesity-research\/\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>Unidad de Alimentos Saludables del Institute for Obesity Research del Tec de Monterrey.<\/strong><\/a><\/p>\n\n\n\n<p>Uno de sus primeros productos, al que Guti\u00e9rrez Uribe denomina \u00abel hijo mayor\u00bb, es el <a href=\"https:\/\/jaseda.com\/nuestra-oferta\/welltives\" target=\"_blank\" rel=\"noreferrer noopener\"><strong>suplemento alimenticio Wellbean<\/strong><\/a><strong>,<\/strong> unas c\u00e1psulas que concentran las propiedades ben\u00e9ficas del alimento. Cada c\u00e1psula, por ejemplo, equivale a 30 gramos de frijol.<\/p>\n\n\n\n<p>En la <a href=\"https:\/\/patents.google.com\/patent\/US7763292B2\/en\" target=\"_blank\" rel=\"noreferrer noopener\">patente de Wellbean<\/a> se lee que los extractos de frijol negro contienen productos naturales con capacidad para \u201ctratar, prevenir o inhibir c\u00e1nceres o el crecimiento de c\u00e9lulas cancerosas\u201d.<\/p>\n\n\n\n<p>Se trata de un suplemento con vitaminas C, D y Zinc que tambi\u00e9n modula el metabolismo, con antioxidantes y antiinflamatorios. <a class=\"wpil_keyword_link\" href=\"https:\/\/tecscience.tec.mx\/es\/humano-social\/janet-gutierrez-alimentos\/\"   title=\"Janet Guti\u00e9rrez: la investigaci\u00f3n en alimentos puede transformar la salud y el emprendimiento\" data-wpil-keyword-link=\"linked\"  data-wpil-monitor-id=\"111\">Janet Guti\u00e9rrez<\/a> sugiere tomar dos c\u00e1psulas al d\u00eda.&nbsp;<\/p>\n\n\n\n<p>\u201cEl frijol negro tiene varios compuestos, pero algunos, cuando los pusimos en mezclas particulares, alteraron la composici\u00f3n de la membrana de la c\u00e9lula y con eso modificaron la manera en que las c\u00e9lulas cancer\u00edgenas utilizan la energ\u00eda\u201d, dice.<\/p>\n\n\n\n<p>\u201cAl hacer eso, limitas el crecimiento de las c\u00e9lulas y, con la mezcla de otros compuestos, le recuerdan a la c\u00e9lula cancer\u00edgena que debe de morir\u201d, agrega la investigadora.<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe title=\"La investigadora mexicana que desarrolla superalimentos a base de ma\u00edz, frijol y agave\" width=\"800\" height=\"450\" src=\"https:\/\/www.youtube.com\/embed\/Abgyfyr33sw?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" referrerpolicy=\"strict-origin-when-cross-origin\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-las-muchas-cualidades-del-frijol-negro\"><strong>Las muchas cualidades del frijol negro<\/strong><\/h2>\n\n\n\n<p>Todos estos compuestos salen de la corteza del frijol y fue tanta la investigaci\u00f3n al respecto en los laboratorios del Tec de Monterrey, que los sacos de frijol sin corteza se comenzaron a acumular.<\/p>\n\n\n\n<p>Dado que el residuo ya no sirve para hacer comida tradicional, en Jaseda buscaron procesarlo sin c\u00e1scara y descubrieron que tambi\u00e9n es un alimento saludable. As\u00ed naci\u00f3 otro de sus productos,<a href=\"https:\/\/welltives.com.mx\/\" target=\"_blank\" rel=\"noreferrer noopener\"> <strong>Tansanas<\/strong><\/a><strong>, botanas a base de ma\u00edz con frijol<\/strong>.<\/p>\n\n\n\n<p>\u201cA veces comemos por ansiedad. Tansanas te va a ayudar a tener saciedad. Adem\u00e1s, tiene actividad desinflamatoria. Te va a ayudar a regular el tracto gastrointestinal\u201d, explica.<\/p>\n\n\n\n<p>Desde 2011, los <a class=\"wpil_keyword_link\" href=\"https:\/\/tecscience.tec.mx\/es\/tecnologia\/investigadores-importantes-del-tec-de-monterrey\/\"   title=\"Del sue\u00f1o a la acci\u00f3n, evoluci\u00f3n de la investigaci\u00f3n del Tec de Monterrey\" data-wpil-keyword-link=\"linked\"  data-wpil-monitor-id=\"131\">investigadores del Tec de Monterrey<\/a> encontraron que la semilla contiene compuestos llamados <strong>flavonoles<\/strong>, los cuales tienen el potencial de inhibir el crecimiento de c\u00e9lulas tumorales.&nbsp;<\/p>\n\n\n\n<p>Este tipo de hallazgos permitieron entender por qu\u00e9, en los estados del pa\u00eds donde m\u00e1s se consume frijol negro, se ha observado una correlaci\u00f3n con la <strong>baja incidencia en los casos de c\u00e1ncer de mama<\/strong>.&nbsp;<\/p>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-premio-a-la-innovacion-alimenticia\"><strong>Premio a la innovaci\u00f3n<\/strong> <strong>alimenticia<\/strong><\/h2>\n\n\n\n<p>En 2023, el suplemento Wellbean fue reconocido con el Premio a la Innovaci\u00f3n Alimenticia en la categor\u00eda <strong>\u201cProducto innovador en suplementos alimenticios<\/strong>\u201d por <a href=\"https:\/\/expo.thefoodtech.com\/\" target=\"_blank\" rel=\"noreferrer noopener\">Food Tech Summit and Expo<\/a>, una de las conferencias internacionales de innovaci\u00f3n alimentaria m\u00e1s relevantes en Latinoam\u00e9rica.<\/p>\n\n\n\n<p>Food Tech reconoce a esta innovaci\u00f3n como \u00abcon actividades biol\u00f3gicas, cient\u00edficamente comprobadas; resultado de m\u00e1s de 15 a\u00f1os de investigaci\u00f3n por parte de cient\u00edficos del Tecnol\u00f3gico de Monterrey. Contiene compuestos antioxidantes y saponinas con actividad biol\u00f3gica similar a otros nutrac\u00e9uticos conocidos, como la ra\u00edz de ginseng o el vino
