Desde la panader\u00eda que abri\u00f3 su padre en Venezuela cuando ella era ni\u00f1a hasta sus investigaciones sobre alimentos mexicanos, como el nopal.<\/p>\n\n\n\n<p>Ganadora del <a href=\"\/es\/tag\/premio-mujer-tec\/\" target=\"_blank\" rel=\"noreferrer noopener\">Premio Mujer Tec 2024<\/a> en la categor\u00eda de <strong>Ciencia<\/strong>, Antunes descubri\u00f3 el gusto por esta desde adolescente; en la secundaria estudi\u00f3 en el laboratorio de biolog\u00eda y aprendi\u00f3 c\u00f3mo funciona el cuerpo y a elaborar ciertos alimentos.<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe title=\"Frijol negro, un aliado para combatir el c\u00e1ncer\" width=\"800\" height=\"450\" src=\"https:\/\/www.youtube.com\/embed\/mpIugyOCEwc?feature=oembed\" frameborder=\"0\" allow=\"accelerometer; autoplay; clipboard-write; encrypted-media; gyroscope; picture-in-picture; web-share\" allowfullscreen><\/iframe>\n<\/div><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-un-proyecto-para-ralentizar-el-crecimiento-de-tumores-malignos\"><strong>Un proyecto para ralentizar el crecimiento de tumores malignos<\/strong><\/h2>\n\n\n\n<p>Desde que comenz\u00f3 a estudiar el doctorado en el Tec, la investigadora se ha enfocado en distintos alimentos y en formas de <strong>amplificar sus beneficios en forma de productos<\/strong>.<\/p>\n\n\n\n<p>\u201cLo resumir\u00eda como el <strong>an\u00e1lisis de los alimentos de la dieta aut\u00f3ctona mexicana<\/strong> para incentivar su consumo a trav\u00e9s de la formaci\u00f3n de nuevos productos que sean accesibles y aprovechar los subproductos de la industria agroalimentaria\u201d, explica.<\/p>\n\n\n\n<p>Varias de sus investigaciones giran alrededor de las <strong>propiedades del nopal<\/strong>, un alimento que, dice, los j\u00f3venes mexicanos han dejado de utilizar debido al f\u00e1cil acceso que se tiene a otros alimentos. En este sentido, Antunes investiga la manera en que los<strong> flavonoides<\/strong> de los nopales ayudan a <strong>ralentizar<\/strong> el crecimiento de un tumor cancer\u00edgeno.<\/p>\n\n\n\n<p>\u201cEn el nopal hemos visto que en ese tipo de mol\u00e9culas tiene la capacidad de generar muerte en las c\u00e9lulas de c\u00e1ncer de colon, con un m\u00ednimo imapcto en las c\u00e9lulas sanas del sistema inmune\u201d, explica.<\/p>\n\n\n\n<p>Esta investigaci\u00f3n, por ejemplo, ya se ha llevado a una <strong>etapa con ratones<\/strong>, a los cuales se ha observado una reducci\u00f3n importante en los tumores.<\/p>\n\n\n\n<p>\u201cTenemos un proyecto como formulaci\u00f3n, en proceso de que pueda ser notificado como invenci\u00f3n, es un producto que es una bebida\u201d, dice.<\/p>\n\n\n\n<p>Otra de sus l\u00edneas de investigaci\u00f3n est\u00e1 en el aprovechamiento de subproductos de la industria agroalimentaria, como la <strong>c\u00e1scara de pi\u00f1a<\/strong>.<\/p>\n\n\n\n<p>\u201cPor procesos de fermantaci\u00f3n a estado s\u00f3lido logramos liberar componentes que quedan en esa matriz que tiene efectos antinflamantorios importantes\u201d, cuenta.<\/p>\n\n\n\n<figure class=\"wp-block-image aligncenter size-full\"><picture>\r\n                <source srcset=\"https:\/\/tecscience.tec.mx\/es\/wp-content\/uploads\/sites\/8\/2024\/02\/premio-mujer-tec-2024-2.webp\" type=\"image\/webp\">\r\n                <img fetchpriority=\"high\" decoding=\"async\" width=\"750\" height=\"500\" src=\"https:\/\/tecscience.tec.mx\/es\/wp-content\/uploads\/sites\/8\/2024\/02\/premio-mujer-tec-2024-2.jpg\" alt=\"\" class=\"wp-image-160775\" srcset=\"https:\/\/tecscience.tec.mx\/es\/wp-content\/uploads\/sites\/8\/2024\/02\/premio-mujer-tec-2024-2.jpg 750w, https:\/\/tecscience.tec.mx\/es\/wp-content\/uploads\/sites\/8\/2024\/02\/premio-mujer-tec-2024-2-300x200.jpg 300w\" sizes=\"(max-width: 750px) 100vw, 750px\" \/>\r\n            <\/picture><figcaption class=\"wp-element-caption\">Antunes sobre el equilibrio entre vida personal y trabajo: \u00abLa ciencia es demandante, sobre todo si quieres contribuir de manera importante, requiere tiempo\u201d. (Foto: Tec de Monterrey)<\/figcaption><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\" id=\"h-la-ciencia-es-demandante\"><strong>La ciencia es demandante<\/strong><\/h2>\n\n\n\n<p>Otro de los subproductos que ha analizado es la <strong>semilla de tuna<\/strong> la cual, a pesar de ser muy peque\u00f1a posee cualidades como Omegas-3, la cual quieren utilizar para beneficiar a ni\u00f1os con obesidad.<\/p>\n\n\n\n<p>La investigadora cuenta que de la carrera en farmac\u00e9utica al doctorado en biotecnolog\u00eda en 2014 no se ha topado con ninguna limitante externa, excepto que le ha sido dif\u00edcil encontrar un <strong>balance entre la vida profesional y la personal<\/strong>.<\/p>\n\n\n\n<p>\u201cSi bien todos te apoyan, tambi\u00e9n quieres estar en otros roles.
